RECIPE: PB Banana Summer Ice Cream Bowls with our Signature Chocolate Granola Clusters

If you're located on Vancouver Island, you know that summer hit very late, and hard. Us folks at Vancouver Island's Own have been keeping busy churning out fresh trail mixes and granolas for faithful locals (and visitors!), but also setting aside time to tackle our monthly eco-challenges; this month is litter-free August and we have been going out for an hour or so, twice a week, to clean up our local neighbourhoods. It's been so nice heading out for an evening walk and not seeing any trash on the ground! On days like today, it seems especially daunting to spend time in the heat picking up garbage, but hey, someone's gotta do it! To reward ourselves (and take some time to cool down), we came up with this fantastically tasty treat: PB Banana Summer Ice Cream Bowls (featuring our vegan PB Milk Chocolate Clusters)!

If you want to go the quick & simple route, start with a pint of locally-made vegan vanilla bean ice cream from Parachute Ice Cream. Or, if you have the time, make your own! We love this vegan vanilla bean ice cream recipe from Beaming Baker, as it has simple, clean ingredients and uses just a touch of maple syrup instead of refined sugar. Since the toppings in this ice cream bowl are pretty sweet, we sometimes add as little as a 1/2 TBSP of natural sweetener to our homemade ice cream instead of the recommended amount (1/4 cup).

Once your ice cream is ready to go, you can move on to the toppings! We used fresh sliced bananas (about half a banana per serving), a sprinkle of cinnamon, heavenly peanut butter chocolate drizzle (find the recipe here), and of course, a generous helping of our PB milk chocolate clusters. We like to break them up a bit to sprinkle over top, but they would be delicious whole as well.

Our clusters are a fantastic protein-packed treat (with our PB Milk Chocolate flavour boasting the highest serving of protein), and are great on their own as a sweet mid-day snack, or crumbled atop your favourite dessert. They add the perfect nutty crunch to snack bars, ice cream, brownies, yogurt, oatmeal, cereal, and more!
